Intense cheese tastes savory due to its high concentration of umami flavor compounds. Umami is one of the five basic tastes, along with sweet, sour, bitter, and salty, and is often described as a savory or meaty taste. Intense cheese, such as aged cheddar or Parmesan, develops a rich and complex flavor profile through the breakdown of proteins and fats during the aging process, resulting in a strong umami taste that contributes to its savory quality. Additionally, the salt content in intense cheese enhances its savory flavor, making it a popular choice for adding depth and richness to dishes. **
